My next phase I have to chose an elective and I think I'm going to choose bar and beverage, because with my business I want to offer a wide variety of drinks. Through this class I will be taught how to mix alcoholic and non alcoholic dirks. That way I will be able to serve everyone.

Baking is something that I don't like, and will have to hire someone to bake for me hopefully not for that long. I just don't like all the measurements that come with it, its a love hate relationship that we have. I love what comes out just don't like what I have to do to accomplish what is need to be done. Because if your just off a little, it can through what every you are making way off, then you'll have to start all over again and I do not have time for that.
Grilling is one for my favorite types of cooking methods. Not only because its cool but because its fun and exciting. The aroma that feels the air when the meat goes on, to the way it brings everybody out to have a good time. But you have to watch some people because they might say they can grill but all they know how to do is burn. It takes a special type of person to make some good B.B.Q. Me, I think that I can do a pretty good job on the grill. But that's because I my own way of doing things.

To me the best kind of food is the kind that you can fall asleep on, and that's not hard for me to do. But to be honest my favorite is southern comfort. I like this kind because its really homie it comes from the heart and soul of a person. Have you heard the saying someone "put their foot in it" that doesn't mean lateral. That just means they put there all in it. Like on Sunday when your at your grandmas house after church and she's cooking, sit down at the table or in front of the t.v. watching the football game what do you see, greens, sweet potatoes, twice cook mac and chees, so forth and so on all smelling good you eat and eat and eat and what do you do when your done............Fall Asleep  
I have been reading a book called Leadership Lessons From A Chef by Charles Carroll how is actually a real chef. The book is very good and give good pointers on how to run a kitchen and be successful in the process. I've gotten some good pointers out of it like how not to carry around stress because it can wear you out in the long run, find something to do in your down time like go to a gym or find a hobby stay active, when you have alone time find a quite room and meditate to relive the stress that has been built up.

I have a finale project that is due in 3 weeks for each of my class, and I was thinking that I would bring them all together and make them all as one. They will all be about one thing and that is southern cooking. I chose that topic because that is the type of restaurant / bar and grill that I want to open up. I want a type of place where people can go and get good food and drinks at a reasonable price and also enjoy live entertainment, a place that the comfort ability is at a high and people love the concept and design of the place.
Today is a good day because I know what I want out of life now. First I want to be the best man that I want to be not only for me but for my kids also, and I also want to be a good husband for that special lady out there, but mostly I want to an awesome Chef and own my own business. In order for that to happen I have to just do what I have to do stay grounded and seek help. My mind set is totally different from before I wasn't thinking like this before and I don't understand why in the world it took me so long to come to this point but neither the less I'm here and can't no one stop me but me.
Tuesday I had an interview at the Hyatt Hotel and I believe it was a very good one, because I was very professional with what I had to say and the question that where asked. That is a job that I love to have because it's a place that I can grow in and become the best cook that I can. There are a lot of restaurants in the area but only a few can offer what you need to grow and prosper and I was told that if I want something bad enough that I need to go for it and don't let anything stop me.

Lecole have to be one of  the best schools that I have ever went to. I say that because  the staff is willing to help you out when you need it and if you need some advise they will give it to you. Take for instance I was going through some things, I lost my job and everything and instead of just dropping out like last year I came in a talked to the DOE and told her what I was going through. She told me what to do and now look I have an interview next week and the Hyatt Motel. I want to thank everybody at the school for there help, and for the support that was given to me.
Yesterday me and some class mates went to a wonderful place in the Delmar Loop called Corner 17. It was a very good place to eat at. Me I had the Pork Rib Noodle Soup, it had very tender ribs with fresh noodles made to order, baby bok choy, with fresh cilantro. And the broth was out standing. I would recommend on going and trying it out.

A couple of days ago my sister asked me if I wanted to start a family restaurant with her, and it shocked me because I was planning to move next year but that gave me something to think about. Its hard to start a business anywhere but I think that as long as I got the support it will turn out good. I also know that 75% of the restaurants in America do not make it out of there first year but I be live that  I will make it.

I think this one is for the books. We all have friends when we grow up some of them stay around and some move away but I feel that the ones that allows you to grow and prosper and helps you when you need it are the ones that will be in your life forever.

 I read that passage in school and it made me think about the life that I live, because if I want to make it I have to leave all the pain and hurt behind and start over. I put that towards my school also, because once I walk into the building I have to leave everything outside.
There are many ways of cooking, some are simple and some are hard. Depending on the style of food you chose to cook depends on the cooking method. Me, myself, I like doing dry cooking because of the aroma that comes off the food that the faces that the people make when they start to smell it.
2 cans of rotel
2lbs of chicken breast
16oz of cheese
2pacs of taco seasoning 
2bags of Doritos


That's not a lot of things and you probably have that in your kitchen and don't even know it. With these simple ingredients and no time at all you can put a little spin on a Mexican dish and make it taste good. I mad these the other day for my girlfriend and her kids and they loved it. They gave me prase all night and it made me feel so good.

Walking into school this morning was like "wow", I cant believe that I almost missed out on this wonderful feeling. Coming here has been a real adventure for me because the things I've learned, and seen has made a big impact on me and the way I think about life. I continue to learn more and more everyday, from all the instructors. I cant wait to move and put my teachings to work for me and see where it takes me in life.


The culinary field is very tricky but very rewarding at the same time. I say that because it takes a lot of hard work and dedication to get where you want to be in this field. To make it is a blessing and a curse. There will be a lot of time away from the family and friends, people will think that you are acting funny with them but that's just because they wont understand at the time, the sacrifice that we have to make to get where we want. Just stay focus and your head down and keep it pushing and at the end of the journey they will know the reason why things happen the way it did.

My time to shine.

South Carolina is a beautiful state that I will be moving to very soon. I'm not moving just because of the beauty but  for the coastal seafood also. Since in school I've come to learn that seafood is really good and let along healthy, and there are so many ways of preparing it. I cant wait for my chance to move and experience the freshness and the quality of what's to come when its my time to shine.

Plans for the furture.

Well my plans for the future? That's not hard as it seems, I plan to move next year to South Carolina to start my career and life from scratch. I feel that if I'm going to do this, and when I say this I mean cooking, I need to stay focus and right on track, because its easy to mess up but its harder to stay commented to what you want in life. But thanks to my instructor's and my class mates I will make it.

The first day of English Composition

Well today was the first day of English class. I know now what it is that I have to do to stay ahead of the game. First and foremost I have to stay focus on my goals and what I want to achieve. Second, I need to make sure that all my support team stay on the same page. And lastly I have to just do it and get the job done.
